The foundation of our flavour profile begins hours before service. We burn specific, seasoned woods chosen for their clean, aromatic smoke, establishing the necessary coal bed without overpowering the delicacy of the seafood.
Blistering Heat
The glowing heart of the kitchen. This is where the crucial searing occurs. The intense, radiant heat of the mature embers locks in moisture instantly, creating the distinct charred edges that define our dishes.
Gentle Resting
The final, most critical stage. As the embers turn to ash, they emit a gentle, insulating warmth. We use this zone for slow resting and delicate finishing, allowing the residual heat to carry the cooking process to perfect completion.
Mastering Distance
